My preliminary review shows that in his Shaw Bros. stunt coordinator heyday, he was romanized to either Simon Hsu, Hsu Er Niu, or Hsu Erh Niu. (Sometimes even misspelt to Hsu Erh Nig).
In the interim, he's primarily worked in TV. But in his two most modern cinematic film credits in the early 2000s, he was romanized in the credits to Chui Yee-Ngau. And as such, I have changed his primary name to Simon Chui Yee-Ngau. I am going to continue to look into how he is credited in television and update further if needed. I will attempt to contact him directly as well. Someone his age may still officially use an older romanization.
If you are interested in how Ngau is pronounced in Cantonese: it is close to the English "Ow".
Anyway ??? is an interesting guy.
